Ube Funnel Cake

Total Time: 25 minutes
Yield: 3- 5” round funnel cakes
Ingredients:
200g pancake/all-purpose baking mix or Bisquick
1 egg (amount according to pancake mix directions)
Water according to pancake mix directions
2 Tbsp. coconut oil (instead of oil requested in direction)
1 Tbsp. Ube Powder (dehydrated ube)
1 tsp. ube extract
2 pcs store bought ube polvoron (House of Polvoron is great. The more purple, the better)
Ube Jam or Halaya
Ube condensed milk (you could flavor regular condensed milk with ube extract)
Chantilly cream or real whipped cream in a can (keep really cold)
At least 3 cups of coconut oil for frying
Other Things You’ll Need
Sauce Gun or Funnel (You can find it on Amazon)
Directions:
Heat coconut oil in deep skillet to 350F.
Make the batter according to the directions and add coconut oil (to replace oil requested on directions), add ube powder, ube extract and mix until combined and smooth. Pour into a sauce gun.
Pass the batter through the funnel and drizzle onto the hot oil in swirl motions. Allow to fry on both sides until golden brown.
Place the funnel cake on a plate, sprinkle crushed Ube Polvoron through a small sieve, top with a small scoop of Ube Jam or Ube Halaya, pipe a rosette of whipped cream beside it and drizzle with Ube condensed milk. Serve and enjoy!
