Easy Bibingka

This recipe is to make a quick and easy Bibingka cake or Bibingka pancakes. This is not traditional whatsoever, but it's super convenient and delish! It's great for when you have guests over and you need to bake something on-the-fly! They'll think you've been baking youre heart out all day! Easy Bibingka

Preparation Time: 10 minutes

Cooking Time: 15 minutes

Total Time: 25 minutes

Yield: 1- 9” round




Ingredients:


  • 200g pancake/all-purpose baking mix or Bisquick

  • 1 egg (amount according to pancake mix directions)

  • coconut cream (replace the amount of water with coconut cream- according to pancake mix directions)

  • 2 tsp. coconut oil

  • 1- 8oz. package of cream cheese and/or Kesong Puti

  • 1 salted duck egg, sliced (optional)

  • banana leaf (optional)

  • 1- 9” pie pan




Directions:


For Baking a Bibingka Cake:

  1. Heat the oven to 350F.  Make the batter according to the directions, but replace the water with coconut cream.

  2. Pass the entire banana leaf on an open flame, so that it becomes pliable. Line your pan with coconut oil and the banana leaf on top.

  3. Fill the pan with the batter and top with cream cheese and salted duck egg slices.

  4. Bake at 350F or until a toothpick comes out clean and the middle part of the cake bounces to touch.  Cut into slices, serve and enjoy!


For Bibingka Pancakes:

  1. Follow the same recipe for the batter for the Bibingka Cake, but cook them just like regular pancakes in a non-stick skillet or cast iron pan with melted butter or coconut oil. Immediately after pouring your batter, place slices of salted egg and cream cheese on top. Flip and finish cooking.

  2. Top your stack of pancakes with a pad of butter and drizzle with your syrup of choice. You could use coconut jam, ube syrup/condensed milk- even regular or maple syrup. Enjoy!
