Edible Moss Recipe | Moss for Cakes

I seriously think I found my new obsession: making edible moss! I'm a sucker for texture and I've always had a thing for actual moss in the wild, floral arrangements, and in terrariums. I think it's just so beautiful. I'm excited to play around with it more in my upcoming designs.

It's super quick and easy to make. Believe it or not, it just takes less than 3 minutes in the microwave! Yes, I said it. The microwave. It sounds cray, but it actually does bake into a beautiful sponge. It ends up having gorgeous layers and crevices, just like moss!

Moss Cake

  • 1 egg

  • 2 Tbsp. Flour

  • 1/4 cup honey

  • 1 tsp. baking powder

  • 1 Tbsp. sugar

  • green food coloring

  1. Mix egg, honey, baking powder, sugar and flour until light yellow and fluffy. I like to use the whisk attachment on my stand mixer. I mix it on high ‘til it’s frothy and bubbly.

  2. Add green gel paste to desired color. I like to use Pandan extract, since it’s already green and adds flavor, but you can totally use green gel paste. You could mix colors, like lemon yellow with grass green, perhaps brown as well. Have fun with it!

  3. Microwave in a small microwave safe container for 2-3 minutes. It’s usually ready in about 2.5 minutes in my microwave. Check the doneness by pouncing your finger in the middle of the cake: it’s ready when it bounces to touch.

  4. Tear into pieces with organic, free-form shapes.

  5. Add dimension with different shades of green petal dust or airbrush food coloring.
