Maruya | Banana Fritters

What can get better than battered and crispy-fried bananas sprinkled in sugar? I love this recipe because there's banana mashed into the batter, but also has a fan of actual sliced Saba banana on top: you get the best of both worlds! Crunchy, not-too-sweet (best Asian dessert compliment, ever), crisp, and soft Banana Fritters. You can make this however you'd like: mash it all, make chunks, add round slices, or fan it out: this is just my fave way of doing it. Enjoy this recipe!

Maruya | Banana Fritters

Preparation Time: 20 minutes

Cooking Time: 10 minutes

Total Preparation and Cooking Time: 30 minutes

Yield: 8 servings


Ingredients:


  • 8 Saba bananas, ripe (smash 4 and leave 4 whole)

  • 1 cup all-purpose flour

  • 1/4 cup corn starch

  • 1 teaspoon baking powder

  • 1 tsp. vanilla extract

  • 1 egg

  • 1 cup milk of choice (cow, oat, coconut, almond etc.)

  • 3/4 cups cooking oil

  • 1/4 teaspoon salt

  • 1/2 cup granulated white, Muscovado, coconut sugar, or powdered sugar for topping



Directions:


  1. In a large mixing bowl, combine flour, corn starch, baking powder, salt, and mix the dry ingredients with a whisk.

  2. Mash 4 bananas and add it to the dry ingredients. Then, add egg, vanilla extract, milk, and lightly mix until well combined.

  3. Divide and slice the remaining bananas into 8 pieces lengthwise. Slice each piece into fanned out slices: this is called Pinaypay (fan). Slice each piece 3/4 of the way (about 4-5 slices), avoid cutting the end to keep the fan together.

  4. Pre-heat oil in a pan to 350F.

  5. Use a medium ice cream scooper to scoop the batter and gently place into hot oil, then immediately place banana fan on top. Fry until golden brown on both sides.

  6. Place on a wire rack to cool and sprinkle sugar on top of each fritter. Serve and enjoy!
