Green Mango and Pomelo Salad

Yield: 4 servings
Ingredients:
2 Tbsp. Barrio Fiesta Bagoong Hipon
2 green mangoes, julienned
1 large red onion, thinly sliced
1 cup tomatoes, sliced
1 pomelo, segmented, and cut into 1” segments
½ cup cilantro
2 Tbsp. calamansi juice (you can substitute with lemon or lime)
1 tsp. garlic powder
2 Tbsp. honey, brown sugar or muscovado
1 Tbsp. Worcestershire sauce
1 Tbsp. brown mustard
5 Tbsp. olive oil
¼ tsp ground black pepper, to taste
½ cup peanuts
½ cup cashews
Directions:
In a medium bowl, add Barrio Fiesta Bagoong Hipon, calamansi juice, garlic powder, honey, Worcestershire sauce, brown mustard and whisk until well combined. Gradually add oil to the mixture until emulsified. Set aside.
In a large bowl, add green mangoes, red onion, tomatoes, half of the pomelo pieces, cilantro and pour the dressing on top. Toss until well combined.
Serve with the rest of the pomelo pieces on top and sprinkle with crushed peanuts, crushed cashews and enjoy!
