Almond RotiBoy Toast



 

Almond RotiBoy Toast

Preparation Time: 20 minutes

Cooking Time: 10 minutes or until done

Total Preparation and Cooking Time: 30 minutes

Yield: 3-4 pieces



Ingredients:


Toast Spread:

  • 1/4 cup butter, room temperature

  • 1/2 cup powdered sugar

  • 1 egg

  • 1 Tbsp. milk

  • 1/2 tsp. best quality vanilla bean extract

  • 1 Tbsp. milk powder or coffee creamer

  • 1/2 cup flour

  • 1/4 tsp. salt



Frangipane Filling:

  • 1 ½ cups almond flour

  • ½ cup sugar

  • ½ cup unsalted butter, cubed and room temperature

  • 2 eggs

  • 2 Tbsp. all purpose flour

  • ¼ tsp. salt

  • 1 tsp. pure almond extract 

  • 1 tsp. best quality vanilla extract



Other Ingredients:

  • slices of bread

  • dark brown or Muscovado sugar (for sprinkling)

  • pumpkin pie spice (or a combo ground cinnamon, ground ginger, ground clove etc.)

  • almonds, sliced



Directions:

Toast Spread:

  1. In a medium bowl, cream together butter and powdered sugar.

  2. Add flour, powder, milk powder, egg, milk and mix until smooth and well combined.

  3. Fill a piping bag with the spread and set aside.


Frangipane Filling:

  1. In a mixing bowl add sugar, butter and mix until well combined.  Add eggs and continue to mix until it’s well incorporated.  

  2. Add almond flour, all purpose flour, salt, almond extract, vanilla extract and mix.  Fill a piping bag with the spread and set aside. Place the rest in a container with a lid and store in the refrigerator or freezer to make more Almond Rotiboy Toast or fill other pastries.


Assembly and Toasting:

  1. Pipe a layer of Frangipane Filling on the slice of bread. Sprinkle Muscovado or brown sugar on top.

  2. Pipe a layer of Toast Spread, add sliced almonds around the edges of the toast, sprinkle with cinnamon or Pumpkin Pie Spice and bake in a toaster oven until the top is light golden brown and crisp and almonds are toasted. Serve and enjoy!
