Ube Kataifi Treats

Yield: 12 servings
Ingredients:
2 ⅓ (375g) Kataifi, thawed
6 cups marshmallows (small)
5 Tbsp. butter, unsalted
2 tsp. Ube extract
1 tsp. best quality vanilla extract
1/4 tsp. Salt
Other Things You’ll Need:
large bowl
silicone/rubber spatulas or cooking spoons
Directions:
Chop or cut Kataifi into 3 inches in length. Spread on a parchment or silicone-lined sheet pan and bake at 350F- constantly flipping until golden brown. You could also bake it in the oven or toast it on a really large pan. Oil or butter is not necessary. Set aside to cool.
Prepare your pan and bowl by greasing it with coconut oil or butter and line with parchment. Grease your utensils (at least 2 rubber spatulas) one will be to mix the marshmallow mixture and one for mixing the Kataifi later on.
In a medium pot, melt butter on low heat- constantly swirling until the milk solids turn golden brown.
Add marshmallows and melt on low heat- stir constantly. Keep on low heat, add salt, ube extract, and vanilla extract and stir until well combined.
Add toasted Kataifi into the greased bowl. Immediately pour melted marshmallow mix over the toasted Kataifi and mix until combined. Allow pieces of Kataifi to peek through, so avoid mixing too much. Avoid worrying about the pieces getting smaller (it’s meant to do that).
Immediately transfer onto your prepared pan, spread and flatten. Set aside for at least 1 hour to cool.
Divide into bars, serve and enjoy!
