Pandesal Cinnamon Rolls

Total Preparation and Cooking Time: 45 minutes
Yield: 6-12 pieces
Ingredients:
Cinnamon Schmear
8oz or 1 cup (227g) butter, room temperature
1/2 cup dark brown sugar or muscovado
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
pinch of salt
1/2 tsp vanilla extract
Icing
1/2 cup powdered sugar
pinch of salt
2 Tbsp. milk (more or less- enough to have a thick consistency for drizzling
1/2 tsp. best quality vanilla extract
Other Ingredients:
6-12 pieces pandesal (6 for a wide loaf pan or 12 for a rectangle pan)
1/4 cup heavy cream or milk of choice (oat, coconut, whole etc.)
1/4 cup toasted pecans
Tools You'll Need:
2 piping bags
2 mixing bowls
wide loaf pan or rectangle pan (6 for a wide loaf pan or 12 for a rectangle pan)
Directions:
Cinnamon Schmear
In a medium bowl, cream together butter, brown sugar, cinnamon, nutmeg, salt and vanilla extract until smooth and well combined. Fill into a piping bag and set aside.
Icing:
In a small bowl, mix together powdered sugar, salt, vanilla extract and gradually add heavy cream or milk until it turns into a thick, but flowy and smooth icing. Avoid it from being runny by not adding too much liquid. Add liquid in small increments. Fill a piping bag and set aside.
Assembly and Baking:
With a butter knife or small serrated knife, cut through the top of each pandesal in a spiral pattern. Start from the outside edge, swirling to the center. Cut through almost to the bottom, but avoid cutting all the way through.
Fill each spiral cavity with the piping bag of cinnamon schmear and fit into a pan. Evenly pour heavy cream or milk on top the pandesal. and spread leftover schmear on the top of the rolls.
Bake at 350F for 15-20 minutes or until the top starts to bubble and caramelize.
Cut a small tip on the piping bag filled with icing and drizzle on top of the rolls.
Sprinkle with toasted pecans and enjoy!
