Macapuno Thumbprint Cookies



 

Macapuno Thumbprint Cookies

Yield: 12 cookies


Ingredients:

  • 2 cups all-purpose flour

  • ½ tsp. baking soda

  • ½ tsp. salt

  • ¾ cup (1½ sticks) butter, melted (optional, browned)

  • 1 1/2 cups packed brown sugar

  • 1 Tbsp. best quality vanilla 

  • 1 egg

  • 1 yolk

  • 1 tsp. Each of Langka, Ube, and Pandan extract (you can purchase this at any Filipino or Asian market in the baking aisle)

  • macapuno shreds for topping (you can purchase this at any Filipino or Asian market in the baking aisle)

  • 2 ½ cups mix-ins, optional (chocolate chips/chunk and/or nuts, marshmallows, etc.)

Directions:

  1. Preheat the oven to 350° F.  

  2. In a stand mixer bowl, fitted with a paddle attachment, cream the melted butter, brown sugar and salt in a mixer. Scrape between mixing to avoid lumps.

  3. Add 1 egg, 1 yolk and the vanilla. Mix until combined.

  4. Add the flour and baking soda and mix on medium speed. Scrape between mixing. Avoid over-mixing. 

  5. Divide the dough into 3 balls. Add langka extract to one ball, ube extract on the 2nd one, and pandan extract on the 3rd and fold to distribute the flavor and color into the dough.

  6. Place cookie dough balls onto a silicone or parchment-lined sheet pan with enough space in between each cookie.  With the back side of a tablespoon, push down in the center of each cookie to make a cavity or “thumbprint”.

  7. Fill each cavity with macapuno shreds.

  8. Bake at 350° F for 11-12 minutes. Avoid over-baking or your cookies won’t be soft and chewy.  A little golden brown at the bottom means it's done.

  9. Allow to cool on the sheet pan, and pack in an airtight container.  The texture gets better the next day!



*Quick Notes:

  • These cookies are always best the next day- kept in an airtight container (a cookie-tin or glass tupperware lined with parchment).  For some reason, they get softer and more chewy overnight.
