Cornbread Bibingka

Total Preparation and Cooking Time: 1 hour
Yield: 15-20 servings
Ingredients:
1 cup glutinous sweet rice flour (I like using the Korean kind. Use regular non-glutinous rice flour for traditional Bibingka. Glutinous rice flour gives it a beautiful bounce, but still cakey texture.)
1 cup yellow corn meal
3/4 cup sugar
1 tsp. salt
1 Tbsp. baking powder
1- 14 oz can coconut cream
2 large eggs
8 Tbsp. (1 stick) butter, melted
1/2 cup sour cream
1 Tbsp. vanilla extract
Optional Toppings:
grated cheese (Queso de Bola, Edam, or sharp cheddar is best)
Itlog na Maalat (salted duck egg), sliced
Other Things You’ll Need:
9x13 pan, 9” round cast iron or cupcake pan, lined with muffin liners
Directions:
Preheat oven to 350F.
In a stand-mixer bowl fitted with a paddle attachment, add rice flour, yellow corn meal, salt, sugar, baking powder and mix until combined.
Add coconut cream, eggs, melted butter, sour cream, vanilla extract, and mix until the batter is free of any lumps.
Pour into a 9x13 pan, 9” round cast iron or muffin pan. This is the step where you add the sliced salted duck eggs on top, if you decide to add them. Bake at 350F for 50 minutes or until center comes out clean when poked with a skewer and bounces to the touch.
Allow to cool, add cheese topping (optional) slice, and enjoy!
Quick Tips ‘n’ Tricks:
You can add corn kernels. Just add 3/4 cups of canned corn, drained.
You can bake it in a banana leaf-lined pan(s)
What’s the difference between the glutinous and non-glutinous rice flour?
Glutinous flour gives a more Mochi-like consistency, but still has a crumb like cake. When you add regular rice flour, it will be more cake-like. I personally love using glutinous flour because it makes it kind of like Butter Mochi, but you really don’t notice the chewy texture that much. It gives a great bounce and feel to the final crumb. The overall texture is moist and soft.
