Caramel Apple RotiBoy Toast

Do you know that crisp topping on Choux au Craquelin or on Conchas? Traveling has allowed me to discover that there's of a version of that beautifully sweet and crackly crust all around the world! In Malaysia they have RotiBoy, which has a beautiful coffee flavor to their crust, in Taiwan, they have Bolo Buns or Pineapple buns both with savory and sweet fillings like Pork and Chicken Curry! Here's a fun new way to spruce up your toast in the morning!



 

Caramel Apple RotiBoy Toast

Preparation Time: 20 minutes

Cooking Time: 15 minutes or until done

Total Preparation and Cooking Time: 30-35 minutes

Yield: 3-4 servings



Ingredients:

Toast Spread:

  • 1/4 cup butter, room temperature

  • 1/2 cup powdered sugar

  • 1 egg

  • 1 Tbsp. milk

  • 1/2 tsp. best quality vanilla bean extract

  • 1 Tbsp. milk powder or coffee creamer

  • 1/2 cup flour

  • 1/4 tsp. salt


Other Ingredients:

  • slices of bread

  • 1 Granny Smith apple, sliced thin (squeeze lemon juice on top to avoid it from oxidizing)

  • pumpkin pie spice (or a combo ground cinnamon, ground ginger, ground clove etc.)

  • caramel sauce (a thick caramel sauce would be best, you could also use, Filipino Coconut Jam, Yema spread etc.)

  • apricot or any jam or jelly for glaze that will pair well with apple



Directions:

Toast Spread:

  1. In a medium bowl, cream together butter and powdered sugar.

  2. Add egg, milk and mix until well combined.

  3. Add flour, milk powder and mix until smooth.

  4. Fill a piping bag with the spread and set aside.


Assembly and Toasting:

  1. Spread a heaping spoon of caramel on a slice of bread. Then, lay a fan of thinly sliced apples on top. Sprinkle Pumpkin Pie Spice or Cinnamon on top.

  2. Pipe a layer of Toast Spread allowing the fanned apples to peak through. Bake in a toaster oven at 350F or until the top is golden brown. Serve and enjoy!
