Butterscotch Cashew Blondies

Yield: 12-16 servings
Ingredients:
1/2 cup white chocolate (for ganache/batter)
1/2 cup butter
3 eggs
3/4 cup dark brown sugar or 1/2 brown and half white granulated
2 tsp. best quality vanilla bean extract or paste
1 cup flour
1/4 tsp. salt
½ cup cashews, chopped
1/4 cup white chocolate (for topping)

Directions:
Preheat the oven to 350° F. Melt butter until brown bits start to appear at the bottom.
Add chocolate to a bowl and pour the brown butter over the chocolate, allowing the residual heat to melt it. Continue to stir and allow it to mix together like ganache.
In a stand mixer or hand mixer fitted with a whip attachment, add brown sugar, salt, eggs and vanilla extract and whip for at least 3 minutes until light, foamy, and sugar is dissolved. Scrape in between mixing to avoid lumps.
Add cooled browned butter and white chocolate ganache mixture.
Add the flour, and mix on medium speed. Scrape between mixing. Avoid over-mixing.
Fold in the cashew pieces (saving a handful for the topping.). Pour into a greased and parchment-lined 8” square or rectangle baking pan (with metal bulldog clips to keep the parchment edges from falling down). Sprinkle remaining cashews on top and bake at 350° F for 30 minutes or until top is crackly and a toothpick comes out clean in the center of the pan: avoid overbaking and underbaking.
Take it out of the oven, tap about 3-5 times and place it back in the oven for 10 more minutes. Remove the blondies from the oven and lightly press down to nudge more cracks on the top layer of the brownies (this is optional, but I like it to look more crackly.)
Allow to cool before cutting and enjoy! Wrap them in parchment paper with a sticker label or washi tape as cute lil' gifts!
