Best Brownies Ever

Total Preparation and Baking Time : 40 min.
Yield: 12-16 servings
Ingredients:
1 cup 52%-62% semisweet, bittersweet, and/or dark chocolate (I love mixing them, depending on what I have in the pantry)
1/2 cup butter
1 cup brown sugar or Muscovado (or half brown sugar and half white sugar)
3 eggs
1 tsp. best quality vanilla extract
1/2 cup flour
1/4 cup cocoa powder
1 tsp. instant coffee powder
1/4 tsp. salt
Directions:
In a small saucepan, melt butter and cook until golden brown bits appear. Turn off the heat, and pour into a bowl of chocolate, allow the residual heat to melt it and mix until smooth.
Mix brown instant espresso powder, sugar, eggs and vanilla extract for at least 3 minutes until light, foamy, and sugar is dissolved.
Add ganache (chocolate and butter mixture) to the foamy egg mixture and mix until well combined.
Add flour, cocoa powder, salt, and gently fold with a rubber spatula until combined. Avoid over mixing.
Pour into a square or rectangle pan, top with nuts and/or chocolate and bake at 175C or 350F for at least 25-30 minutes.
Remove the brownies from the oven and lightly press down to nudge more cracks on the top layer of the brownies (this is optional, but I like it to look more crackly.) Allow to cool and cut into even pieces. Serve and enjoy!
