Pineapple, Corn and Queso Fresco Salsa | Easy Dip | Appetizer

Want a super easy dip that has Summer written all over it?  Make this Pineapple, Corn and Queso Fresco Salsa for your next pool party or backyard BBQ!  There's something refreshing, juicy, and mouthwatering about this dip. I love the texture and sweetness of the corn kernels and bits of pineapple mixed with the contrast of crumbly, salty Queso Fresco and smooth cream cheese. So delish and super addicting.

Ingredients:


1- 15 oz. can pineapple chunks, juice drained 


1- 15 oz. can corn kernels


1 clove garlic


1/4 cup green onions


1/2 cup Queso Fresco (Queso Blanco), cubed 


1/2 cup cream cheese, cubed


juice of 2 limes


1 tsp. hot sauce


1/4 tsp. salt


pinch of pepper


2 tbsp. cilantro (optional)


1 tbsp. chopped green chili peppers (optional)


tortilla chips

Directions:


Chop green onions, garlic (minced) pineapple chunks, and cilantro (optional).


In a bowl, combine the green onions, garlic, pineapple chunks, corn, cilantro, chili peppers, lime juice, hot sauce, cream cheese and Queso Fresco. Add salt and pepper to taste.


Transfer into a serving bowl with chips on the side. Enjoy!
