Mermaid Ice Cream Sandwiches


What this thingamabob mermaid sorcery, you ask? One of my most favorite frozen desserts is a good ol' ice cream sandwich. I've always loved making them from scratch and they're super easy!

My fave part of an ice cream sandwich is when the cookie absorbs the ice cream and it gets soft, stick-to-your-fingers-gooey that is just irresistible!

I'm totally riding this mermaid trend while it lasts, because the color palette is a dream for me! I feel like it's the color combo of my life! I've always gravitated towards it and for it to be in Ice Cream Sandwich form? Yas!

I also made this with Ube flavored ice cream, which is a huge trend with foodies on Instagram right now. I love the flavor of Ube and the naturally purplish color was just....PUR-fect! You just have to go to your local Asian or Filipino market near you and they'll definitely have it in their freezer section. If you are not feeling adventurous, you could always opt for the blueberry or any purple colored ice cream out there.

::Sings:: You want ice cream sandwiches? I've got plenty, but who cares, no big deal, I want mooooooore!

Ingredients

  • 1 package white cake mix

  • Teal food coloring (cake decorating gel paste). Mix green and blue food coloring if unable to find teal colored gel paste.

  • 1/4 cup butter, softened

  • 1 large egg

  • 1 tablespoon water

  • 1 teaspoon vanilla extract

  • 1/2 gallon ice any purple colored ice cream like Ube/Taro or Blueberry

Directions:

  1. Combine the cake mix, butter, egg, water and vanilla until well blended.

  2. Between parchment paper, roll dough to desired shape and size about 1/4" thick. Allow cookies to be cut in even pairs to make a sandwich. The ones I make are 6" x 3" rectangles.

  3. Bake at 350° for 8-10 minutes or until puffed and brown on the back side. You can prick holes of you'd like or leave it plain.

  4. Cut ice cream into slices to fit into the cookies. Place ice cream slice between two cookies. These can be wrapped in cute printed parchment paper, wax paper or plastic wrap. Freeze on a sheet pan. Enjoy!
