3 Cheese Stuffed Bacon Wrapped Medjools
Need a ridiculously easy and super yummy app for your next dinner party? Classic bleu cheese stuffed, bacon wrapped dates: good. THREE cheese stuffed bacon wrapped Medjool dates: better! In true Greggy form, I always have to take it over-the-top, even further with a coating of crispy Panko break crumbs. You have the perfect blend of textures and flavors from crispy Panko, creamy cheeses, smoky, salty bacon and sweet Medjool dates. Medjools have always been luxurious on it's own and making this recipe will definitely impress your hungry guests. No joke: these are delicious!
Ingredients:
1 cup cheddar cheese, shredded
8 oz. package of cream cheese
1/2 cup Bleu cheese
1 tsp. garlic powder
pinch of ground black pepper
20-25 bacon slices
20-25 Medjool dates
2 cups Panko Bread Crumbs
3 eggs
1 cup flour
toothpicks
Directions:
1. Blend all 3 cheeses, garlic powder and black pepper in a stand mixer or with a spatula. Make sure cream cheese is stiff and cold.
2. With a mini ice cream scoop/disher or a teaspoon, stuff each date with the filling.
3. Prepare separate bowls of flour, Panko and eggs wash. Make an egg wash by beating 3 eggs and dip each date in to egg wash, then into the flour, then egg wash again, and finish it off in Panko.
4. Wrap each date with bacon, using a toothpick to hold it together.
5. Dredge each date with Panko. Egg wash isn't necessary, because the Panko will stick to the bacon. You can dip in the egg wash, if you'd like.
6. Bake at 375 F, until bacon is crisp and Panko is golden.
7. I had toothpicks to hold them together and switched them with these super cute sword picks, after they cooled down. You could also use bamboo toothpicks. Serve and enjoy!
