Taco Lasagna with Cheesy Bechamel Sauce


Love tacos and lasagna? This mashup is the naughtiest, most comforting dish to bring you straight into Fall-mode. This Taco Lasagna has a béchamel topping, layered with your fave Mexican ingredients and loaded with ooey-gooey cheesy goodness! So wrong, yet SO right.

Ingredients:

  • 3 lbs. of ground beef or turkey

  • 1/2 cup onions, diced

  • 5 cloves of garlic, minced

  • 1 taco seasoning packet

  • 1- 28 oz. can of enchilada sauce

  • 1- 16 oz. can of refried beans

  • 1 3.8 oz. can of olives

  • 20 small to medium-sized corn tortillas

  • 1 oz. package of shredded cheddar cheese or Mexican Blend cheese

  • 12 slices of American cheese

The Bechamel Sauce Topping:

  • 1 stick of butter

  • 1/2 cup of all-purpose flour

  • 3 cups of milk

  • 1 tbsp. sugar

  • salt and pepper to taste

1. Cook 3lbs. of ground turkey or beef. (I used turkey, since i'm trying to be healthy ::wink::) along with a taco seasoning packet according to the directions on the package.

2. Start by layering 4 corn tortillas in a 10-12" square casserole dish, then add a layer of American cheese. I'm not a snob when it comes to American Cheese. Gotta' admit; I love the stuff! If you're a hater, then go ahead and use you're fancy cheese. ;)

2. Add another layer of corn tortillas and douse with a bit of enchilada sauce (leaving some left over for other layers. Top with cooked meat and add little bit more enchilada sauce.

3. Top with another layer of tortillas and spread 1/2 a can of refried beans, 4 more slices of American cheese and a bit more enchilada sauce (just enough to coat the entire layer).

4. Repeat the process of layers until all ingredients are used. Feel free to get creative with the order of the layers, no need to follow this exactly.

5. Melt 1 stick of butter and cook flour, making a roux. Gradually whisk milk into the roux, until the mixture is smooth. Add sugar, salt and pepper to taste. Spread on the top layer of Taco Lasagna. (Mixture should be thick, pourable, and spreadable. Not too thick and not too thin.

6. Top with a generous sprinkling of shredded Cheddar cheese and Monterey Jack along with sliced black olives.

7. Bake in the oven at 350F for 30-35 minutes, until cheese melts and topping is bubbly.

Now snuggle up on the bed with Netflix and chill.
