Corn and Cheese Dip | Appetizer

Tired of the ol' Spinach and Artichoke Dip and boring Cheese Ball during the holidays?  Here's a ridiculously delicious and easy appetizer that will definitely waken your guests' palates this holiday season!  What's great about this recipe is that it can be eaten as a dip, hot or cold, and even be used as a spread in sandwiches. Oh, and it makes the best grilled cheese, ever!  I made an Eggs Ben' the other day and spread it on top of the English Muffin, then placed it in the broiler for a couple seconds, layered the ham, and placed the poached egg on top, with a drizzling of Hollandaise: fuhgetta'boutit!  Decadently delicious!  

Ingredients:

  •  1 cup sour cream

  • 1/2 cup green onions, sliced

  • 1 clove garlic

  • 3 cups grated Colby Jack Cheddar cheese

  • 1/2 stick of butter, room temperature

  • 8 oz. cream cheese, room temperature

  • 1/2 tsp. salt

  • 1/2 cracked black pepper

  • 15.25oz. can of sweet corn kernels

Directions:

1. Mix sour cream, garlic, cream cheese, butter, salt, pepper and half can of the sweet corn kernels in a food processor until the garlic is chopped and mixture is combined.

2. With a rubber spatula, fold in the green onions, remaining corn kernels and shredded cheese, leaving about 1/4 cup to the side for the top.

3. Place unto small ramekins or 1 large shallow oven-safe dish, top with remaining cheese and bake at 350 F, until the mixture is bubbling and the cheese is golden brown.

4. Serve with crackers or bread and enjoy!  

What's great about this recipe and using ramekins is that you can make more than 1 dip for each side of the dinner table; that way, you avoid dunking into 1 dip and everyone climbing all over each other!  You could also make these ramekins ahead of time, cover with foil and bake until it's the day of your party! 1 less thing for you to do on the day of your event!

Another variation is baking it in a sourdough boule, by cutting off the top or the boule, digging out the crumb, stuffing it with your mixture and baking it! Delish!
