Piña Colada Ice Box Cake | No Bake | Summer Dessert
Gotta' sweet tooth and too hot outside to bake? Well, here's the perfect summer treat without the fuss of turning on the oven! This Pina Colada Ice Box cake has layers of coconut biscuits, Coconut Cream, Pineapple Filling, and Cheesecake Topping, sprinkle with toasted coconut and pineapple. This recipe is perfect for that hot summer day!
Ingredients:
Pineapple Filling
One 20 oz. can of pineapple tidbits
1/2 cup granulated sugar
2 Tablespoons cornstarch
1/4 tsp. Pink Himalayan Sea Salt
1 tsp. vanilla extract
Coconut Cream:
1 20 oz. can coconut cream or full fat coconut milk
3/4 cup powdered sugar
1 tsp vanilla extract
1/4 tsp. Pink Himalayan Sea Salt
3 Tbsp. Corn Starch
Coconut Cheesecake Topping
1 cup toasted coconut flakes
8 oz. cream cheese
1/4 cup powdered sugar
1/4 tsp. vanilla
Other Ingredients:
coconut flavored tea biscuits or vanilla Biscuits (coconut flavored would be much more fitting/perfect for this recipe.)
Directions:
1. Make Pineapple Filling by combining all ingredients in a saucepan and cook over medium heat. When the mixture begins to boil, stir constantly until it begins to thicken, then cook approximately 1 to 2 minutes, vigorously mixing. Set aside.
2. Make Coconut Cream my combining coconut cream, powdered sugar, vanilla, salt and cornstarch and cook until thick and creamy. Once it comes to a boil, cook for 1-2 minutes straight, to remove starch flavor (just like the Pineapple Filling). Set aside.
3. Make Coconut Cheesecake Topping by combining cream cheese, powdered sugar, and vanilla in a mixer and whipping for 1 minute, until creamy.
4. Begin layering an 8"x8" square pan, starting with biscuits, then a layer of Whipped Coconut Cream, another layer of biscuits, and then a layer of Pineapple Filling. Repeat the process until you reach the top of the pan, ending with biscuits and leaving a little space on top.
5. Top final layer with Cheesecake Topping, toasted coconut and dried pineapple.
6. Refrigerator for at least 5 hours or overnight. Slice, serve and enjoy!
*This recipe is even MORE delicious when you add real whipped cream into the layers or a dollop on top. SO good!
