Coconut Creamsicles
Hope you're keepin' cool in this warm Summer weather. I'm in Cali and it's hot as a Tamale out there. Here's a yummy and super easy recipe for Creamy Coconut Vanilla Bean Popsicles. There's something about the simplicity of the coconut flavor and vanilla bean flecks in this refreshing and milky popsicle.
Ingredients:
-1 14oz. can of coconut cream or any high-fat coconut creamy (like Savoy brand)
-1/2 cup sugar
-1/2 cup water
-pinch of salt
-Sonoma Valley Syrup Co. Vanilla Bean Crush. (If you don't have access to this, use an actual vanilla bean, scraped. I'd do just half of a pod.)
Directions:
1. Boil 1/2 cup of water and pour 1/2 cup of sugar and pinch of salt, until it dissolves. This is a basic 1:1 recipe for Simple Syrup.
2. Place Simple Syrup in refrigerator or freezer and allow to cool.
3. Mix coconut cream with simple syrup.
4. Prepare your clean popsicle molds with Washi Tape, so that you're custom popsicle stick can stay upright and in the center. I like doing this, because I can place any type of custom, cute popsicle stick that I'd like in it.
5. Place in the freezer to harden overnight.
6. Dip bottom of popsicle mold inside a cold water bath until the popsicles pop out.
